Austin Waiter joined Goodnight Hospitality in 2022 as chef/partner for their new restaurant, The Marigold Club. Centered around intimate banquettes and a speakeasy-inspired private dining room, The Marigold club will serve modern continental cuisine with elevated execution. Prior to joining Goodnight Hospitality, Austin served for five years as the executive chef for the iconic, Tony’s restaurant. He joined Tony’s in 2014 after finishing his education at the Culinary Institute of America in Hyde Park, New York. Since leaving Tony’s he has worked at one-star Michelin restaurants, The Five Fields and Frog by Adam Handling as well as three-star Michelin restaurant Core by Clare Smyth in London. Austin prides himself on bold sauces and innovative cooking and is also an avid supporter of local farms and producers like Goodnight Hospitality’s partner farm Goodthyme Farm.
